Italian Avocado Soup
Ingredients :
2 avocados
1 tbsp of lemon juice (squeezed from fresh lemon)
1 tbsp of chopped fresh parsley leaf
2 cups of Chicken stock
1 tbsp of fresh chive
1.5 cup of light cream
Salt and pepper to taste
Directions:

Take a blender and put in a lemon juice. Then place halves of avocado (without pits). Chop it together for couple minutes, until smooth. Place the avocado flesh, chives, stock, cream, parsley and Worcestershire sauce in the blender and grated until the mixture becomes smooth puree.

 

Season it with salt and pepper and place it in the container with the cover. Cover it and place it in the refrigerator for at least half an hour.

 

Once serving you can garnish it with swirl of cream and chives.
